I have changed the key signature of an instrument to simplify reading and playing but it has generated some double sharps - how do I simplify it further by removing them but leaving the chosen note still playing.

Not sure why that has separate sections for "Change enharmonic spelling" and " Respell pitches" though, seems to be the very same thing?

Well, they are entirely different commands, using entirely different algorithms (the latter uses some experimental AI-like technology to guess at "correct" spelling, the former is just a toggle). but they surely deserve to be discussed side by side.
