Change Channels not working in 3.6

This mentions changing channels for sounds (pizz or arco), but it is impossible for me. For my musescore 3.6, the interface looks like the attached image.

Don't use system text for that, this won't work (and never did), but use staff text instead (and that 2.x Howto does explicitly mention staff text, while your image does show system text).
Or, better and far easier, use the corresponding entries from the text palette
