Putting system text above chord symbols
Whenever I try to put system text above a chord symbol it moves the chord symbol as well. I can't find a way to put put the chord below the text.

Try turning off "Automatic placement" for one or both.
Actually it seems to me system text does go above chord symbols by default - but not when those chord symbols are attached to fret diagrams. I can't recall but that might have been a conscious choice to keep it from getting too far away given how tall fret diagrams are.
Anyhow, indeed, disabling autoplace for one of the elements is a reasonable solution. I'd probably pick the system text, because the fret diagram and chord symbol will benefit more from leaving it enabled.
