stave number changes in an arrangement
I'm arranging a song in unison for the verses and 4 part harmony for the choruses and introduction. Is there a way to have only one stave showing for the unison part and then the 4 staves showing for the harmony parts??

Yes. Add all the staves you'll want, add the notes, then turn on Format / Style / Score / Hide empty staves.
