I'm not sure what happened but when I plugged out my headphones the audio from musescore (The app) completely stopped and when I clicked play on my song it was silent.

MuseScore is still trying to send audio to your (no longer present) headphones, because it is not made aware of the unplugging.
Try toggling the MIDI input button on the toolbar twice. Or simply select the desired new output device in Edit > Preferences > I/O
