Fix Bars per Stave
I have written a piece, all nicely formatted with 3 bars per stave, which is what I want. However, when entering lyrics it is automatically expanding to only 2 bars per stave. How do I stop this, please?

By using wider paper, narrower page border, less stretch or an overall smaller spacing
It would only be expanding if there isn't actually room for the lyrics otherwise. So it must be that given your current page size, staff size, font size, and lyrics spacing, you can't actually fit three measures on those systems. So one or more of those will have to give, as mentioned. The settings are in Format / Page Settings, Format / Style / Lyrics, and Format / Style / Text Style (where you can set the font for odd and even verses separately).
