How to create a multi-measure rest for a piece in odd time
So I wrote a piece that is in alternating 7/8 and 10/8 compound meter. When I generate the parts I get a lot of measure of rest that don't group into multi-measure rests because I've edited half the measures to extend their length to 10 beats. How can I give musicians a good idea of how many measures to count? Or is it possible to group these as a multi-measure rest?

There wouldn't be a direct way to do that; I'm not sure standard music notation even has such a concept for MuseScore to implement. Perhaps the better way to have done this would be to make those all 17/8 measures, and add mid-measure dotted barlines where desired. Although I can't say I love that idea either.
multimeasure rests do combine empty measures of the same lenght, so no, that won't work.
