How do I select a given range in only one voice? for example, I have decided to switch from an oboe 1+2 part with two voices into two individual oboe parts with one voice each on my score, and now I want to delete the oboe two part from the oboe one part.

The Selection Filter (F6) will be your friend.
For future reference, you can do all this in one step, Tools / Explode. It automatically splits a two-voice part into two one-voice parts.
