enter some notes in a bar. in the next bar, enter a repeat bar sign. Mark it or the entire bar and hit shortcut "<" or "shift +>".

I think you have to change the shortcut in the options-menu. Default shortcuts on MAC for crescendo is shift+, and decrescendo is shift+.
But I tried to change the shortcuts to < for crescendo (is working) and shift+< or > (is not working).

I'm on Windows, but I tried your suggestion and by setting and resetting them to original I got it working. It seems to me though that there are something that's not all right with shortcuts. I often use the shortcut to put parenthesis aorund an element. Previously it was "(", now it's ")". That's fine, but no matter what I do I can't set it to something else, for exemaple the ols style. It does not work.
