One way is to use Insert mode for note entry, so that the length of the measure grows infinitely. You can add any desired barlines later. See a previous thread about Plainsong chant:

And to add many lyric syllables or words to a single note, you need to use Ctrl+Space or Ctrl+Hyphen instead of the usual Space or Hyphen.
