Is there any way to hide all instruments instead of hiding them one at a time?

Why would you hide all the instruments? Surely the point of a notation program is to have some visible notation. If you just want to listen and not see the score, just minimise the Musescore window.

Because I want to be able to work with 1 or 2 instruments at a time.

So you don't want to hide to hide all instruments.
If you want to work with just a section of instruments it is often useful to create a part that contains just those you want to work with. See https://musescore.org/en/handbook/4/parts#creating-custom-parts
