Text / symbols interfering with each other
I am having issues when, for instance, using an 8va line and then pasting text above this line, e.g. pizz or dynamics etc. Sometimes, the 8va line jumps up and I have to drag it back down so that the pizz. is above it. Is it possible to somehow fix the line so that anything I paste does not interfere with it?

Pizz. always goes above an 8va line for me unless I deselect Auto place for the line or the pizz marking in the Properties - Appearance tab.
If Auto place is selected for both the line and the marking and you still have the same behaviour come back and attach the score (.mscz file) that demonstrates the problem.

Actually, I see you also mention dynamics. They would normally go below an 8va line if placed above the stave.

Depends. If you use more than 1 voice or do unconventional things...

Well, Musescore defaults to the conventional usage. If you want to go off-piste you will need to take care of placements yourself and deselect Auto place.
