I just downloaded Musecore 3
I just downloaded MuseScore 3 & unpitched percussion is not available, or I don't see where to add it.
Can you tell me where to access this feature?

If you mean when setting up a new score, double click "Choose Instruments".
It should be there in the new score wizard - choose instruments:

Or, on an existing score, press 'i' to open the instruments dialog.
Otherwise use "Help -> Revert to factory settings"
