Is it possible to set a colour for all dynamics rather than one by one?
(ie p, ppp, ff, <, > etc)

I think this is a bug, selecting all dynamics doesn't work via the sub menu (rightclick) and choosing "Similiar".
Please report it at GitHub.

There's no option for it in format

Click on any Dynamic, change its colour in the Properties tab then click on the three dots and choose "Save as default style for this score".
