Adjusting Staff Size
How do I make the size of the staffs larger? I have a hard time seeing the notes when they are the default size.

I believe you want Format / Page settings / Scaling / Staff space. Increase the Staff space value to scale the staff size larger. Experiment to find the size that works for you.
Do you want them larger when you print them on paper? or only on the screen when you do the editing? The scaling makes the bigger on the paper. If you just want to see them larger on the screen you can use the "Zoom" in the "View" Menu or use the Ctrl-Scrollwheel.
