Invisible Text & Instruments

Hello, and thanks in advance for helping me.

I am trying to compose a symphony for full orchestra, and so I have many more instruments than can be shown on one 8.5x11 sheet of paper. I was wondering if there was currently any way to carry over instruments to a new page, or if there was a way to adjust sheet height based on the number of instruments.

In addition, no system text appeared when I created the score. Is there something I messed up in Preferences, or is it something I can fix?
