No Tempo Names
I cannot find anywhere in the 2.0 where to locate Tempos - such as Allegro, Largo, etc. and their speed indications that I can manipulate. All it gives is 80 as a Tempo marking. And if I change that speed it still plays at the original 80 marking. Am I doing something wrong?

No, you're doing it right. One way to enter Allegro with a value of 144 is to first enter the marking with the 144, then exit edit mode, then double click it and change it to Allegro. The 144 will "stick". Or, just enter Allegro in the first place, and enter 144 into the corresponding box in the Inspector.
