Flat signs
All the flat symbols in my scores appear as voids (little blank squares). Is this a font problem? How do I get the correct symbols to display?

Which version of MuseScore, what operating system, can you share the score?
Do you have the MuseScore fonts installed? E.g. "Mscore"? If so, remove it
My guess is you are on Linux, and had previously installed a faulty 1.3 package that incorrectly installed the MScore fonts, and that you are now trying 2.0, and it is seeing those old incompatible MScore fonts. Solution assuming these guesses are all true is to install the faulty 1.3 package.

No, not on Linux . Standard Windows XP. I'll try removing the MScore fonts as suggested. Thanks for all your input.
