Add another line
Say I want to have the cellos all of a sudden split parts and I want to add a new staff underneath to have the secondary cello part. How do I do that?

Add another cello, enter the notes, then use 'hide empty staves'

I would recommend not adding another cello, but rather adding another staff to the cello. Both options are controlled in the Instruments dialog (press [i]). "Hide empty staves" is in the General Style dialog (under the Style menu).
