Change whole score to Arial once finished
Is it possible to change all the text in my score from Times New Roman to Arial, or another font? Without having to go through and do it piece of text by piece of text?

Select a single piece of text, right click and select text properties, change the font, and enable the "apply to all elements of same type" option. Note by "same type", this seems to mean that you'd still have to do staff text separately from dynamics or rehearsal markings or lyrics, but maybe that's all you want. Definitely pays to figure out fonts before you get too deep into a score, though.
