It's no more possible to open an unknown file type with MuseScore (r3249). For next version (0.9.6.1) nothing will happens. For the version after (trunk) an error message will be displayed. There is no more blank tab added.
Yes. It's a mac thing. The unselected file types are always display on mac but are greyed out.
See for example this picture for a software opening SWF files.
Normally the greyed filenames are not selectable. So you can't open them. MuseScore works just like this.

What do you mean by openable ?
The only way I see to "open" a sdpproj file is by dragging it in the score and indeed it's a bug.
Any other way ?

I could open it on Snow Leopard (don't know about Tiger yet) without dragging it.

For the next version, instead of an error message, can the file just be invisible like other unknown file types?

Invisible where ? In File -> Open the files with unsupported file extension are hidden, except if you choose All Files in the Open file dialog box.
