Would it be okay to change a section completely made of triplets into 12/8 time and increase the tempo?

If by "okay" you mean "allowed within the rules of music notation" then the answer is yes, this is perfectly acceptable.
However, if you are asking "is there a quick way to do this in MuseScore?" then I'm afraid the answer is no; you will need to write out the music again manually in the new time signature.

Thanks! I don't mind writing it all out again, it's just that it looked so clutter with all the triplets :'D
