How do I get to see the toolbar for adding notes? I want to drag the length of note / of pause that I select, into the score.

right-click into the menu bar, enable note Input. Or reset to factory settings.
But you don't drag from there, you just select. And you can do that via keyboard too, numbers 0 (pause), 1-9, and the period (for dotted notes), probably best from NumPad
