use the small b for a flat and numbers sign # for a sharp.

Nothing else will transpose, including the natural sign.
Or Ctrl+Shift+b and Ctrl+Shift+# (or Ctrl+Shift+h for a natural)
But see https://musescore.org/en/handbook/chord-symbols

Thanks for easy natural symbol!

It comes at a price though: A chord using it won't play back correctly, may not transpose and not export to XML correctly

Natural signs are not normally used in chord symbols, and they would only confuse musicians who have likely never seen one in that context before. I mean, they've seen natural signs, but not in chord symbols. So likely they would wonder what you meant and try to do something unusual and hence wrong. Better to skip them unless you have a very special reason to include one. And then do keep in mind that as mentioned, they won't be understood properly by MuseScore either.
