So, by design - they are deleted like anything else (select and delete), but certainly worth considering adding a new feature to toggle them more easily.
The problem (to overcome) is that is really 2 separate parens (open and close) getting added. Other than with accidentals, where this is a property, "has bracket", which is easy to toggle.
ok found the actual problem, which isnt that the parentheses arent deletable, but that you can add several parentheses on the same note, essentially just layers of parentheses. so deleting the top one wont change the appearance giving the illusion of it not being deletable. still something to take note of
Ah, a double-click vs. single-click issue, similar as for voltas. A double-click was needed in older MuseScore versions to add one (set of) element(s) from the palettes, now a single-click is sufficient and a double-click (old habits die hard) adds them twice (and another double-click adds 2 more, etc.).
Making it a toggle would fix this indeed (but needs the old habit getting fixed)

Brackets for accidentals are not a toggle either, but al least can't get added multiple times (reason stated further up)
