Score audio
Hello, recently I made a score using sound fonts derived outside of the original program, and to combat this, I uploaded the mp3 to youtube, changed the audio source to youtube, and marked every single measure. Yet, every time I click play on the score, it doesn't use youtube audio, it only uses the original score audio and it replaces great sound fonts with terrible sounding ones.

Likely you've overlooked some default sound source setting or something. For what it's worth, your "Resurrections" score (https://musescore.com/user/20282911/scores/6919321) by default loads the linked youtube video when I press play on it.
Note that alternate audio sources only work on desktop browsers; mobile ones use the default audio as far as I know.

I don't think so, at least "All These Things" does use the custom audio (from the youtube video)

I don't know what "All These Things" is, but on my scores at least and the one linked above "Resurrections", both Chrome and Safari on my iPhone play the default audio always.

Seems to work just fine for me, Android, Chrome
Switching between then via that mixer icon, those 3 sliders

No such luck on iOS. Playback by default is the standard soundfont. Attempting to select a different audio source shows me "YouTube playback is not supported by your browser/platform".
