Two Staff Arpeggio
I followed suggestions and was able to edit the arpeggio's length. Until I hit Save. Figure 1 is what I was able to do, and figure 2 is what happens when I save. How do I keep it looking like figure 1?

Try turning off Auto-placement for the arpeggio.
