Pedal up between bars doesn't work on MIDI out
I wanted to playback my piano score with Kontakt Player and the pedal doesn't go up between bars. It plays fine with the built in musescore player though.

I don't quite understand what you mean by "between bars"? Do you mean you entered pedal markings ending at the end of every bar and MuseScore plays it like that, but Kontakt doesn't? Can you please attach the score as well? We will be able to help you better if we can see the actual score (.mscz file).

I put a pedal line under every single bar from start to finish (tried both the ones with and without the star at the end). While in musescore it released the pedal at the end of every bar, it never released the pedal in the midi signal, as if I just drew a looooong pedal line across my whole piece. The score isn't like that anymore, I made every pedal line one note shorter so that there's a break but of course that doesn't sound nearly as good. Sorry if I'm being unclear, I'm not really good at all this.

Try exporting the score as midi file and then re-importing the midi file. What do you see?
PS It would still help even more if you can attach the file here.
My guess is that the MuseScore is outputting the down and subsequent up more quickly than Kontakt is prepared to handle. Seems some other third party program (or maybe it was someone else with Kontakt) had a similar issue. Check to see if there is some setting in Kontakt to make it more sensitive to quick up/down.

If this discussion doesn't help, go make your own, as the version of MuseScore in question is outdated.
