I need to create a chant type score with no fixed time signature. It does not appear in the choices.

In https://musescore.org/en/handbook/staff-properties you can switch off the display of the time sig.
In https://musescore.org/en/handbook/measure-operations#properties you can set the measures' actual duration.
Helpfull is https://musescore.org/en/handbook/measure-operations#split-join.

And yes, meterless notation is not the most straight forward thing to do in MuseScore ;-)
