I have a piece for Oboe being played by a professional Oboist. On my score, any notes above E6 are grey not black. Can this be corrected?

When they're printed they'll be black. But to correct it on your screen you can right click the staff, choose staff/part properties then change the amateur range to match the professional range (click the note name and a new window appears).

But now your oboist friend is wearing a different shirt. Use that procedure only if your friend doesn't mind this effect.
