Eighth notes with half note heads [please help]
I'm having trouble finding a way to make eighth notes have half note heads (so they alternate like sixteenth notes). I've figured out that I can change the note head's appearance in the Inspector, but this does not affect the playback. Please help

I'm guesisng maybe you are referring to tremolo? See the corresponding section of the Handbook. You probably want to enter two sixteenths, use the tremolo to convert them to tremolo notation - which will look like two eighths - then change the notehead if desired.
If this doesn't help, please post a picture of what you are trying to do, and attach your score as it stands.

I'm trying to do something like this... If the beamed noted are two different notes tremolo will not work

Yes, that is indeed tremolo. See my previous response to learn how to do this.

Actually I've heard of something called Void Notation which was most notably used by Charpentier. For Example an Eighth Note w/ a Half Note head is actually an Alternative Quarter Note. They've probably done that to save ink.
