midi in has created sharps, I want to change to flats
After midi in (of a free score I downloaded) and thereafter chasing some of the instruments (changed flute to soprano sax, a transposing instrument), the sax part in in the key of C (really A minor), I see lots of A# and D# where I'd much rather see Bb and Eb. What's the best way to either prevent this or after the fact go back and change all A# to Bb etc? I've tried setting the key signature to Bb, but that didn't help much.

What I ended up doing was selecting all the measure in the score, excluding the drums, then pressing UP followed by DOWN.
What is J? Is it on a menu somewhere?

That's not the same thing, though. J simply cycles through enharmonic spellings every time you press it. Respell Pitches does something more complicated.

Ah, yes, sorry. J and Shift+J are sortcuts for enharmonic spelling up/down, see https://musescore.org/en/handbook/note-input#other-shortcuts

Is J supposed to respell the entire score, or is it intended to work on the selected note(s)?

It appears that for J you need to only select the notes you want changed. If you select the whole measure, it'll change everything to double flats or sharps.
