Open the mixer by pressing F10 and check the solo box

Also, depending on what you are actually trying to accomplish, see the section on "Part extraction" in the Handbook.
There are two ways to do this:
1) Create a part for this instrument ("Parts" in the File menu) and access the sheet music for just that instrument.
2) Open the mixer by either navigating to it in the View menu, or pressing F10. Check the "solo" box for the instrument you want.
