Ability to preset fonts in preferences

I wish I could preset fonts in preferences which would apply for each new document that I create.
It is possible to create a preset within one document at a time.
Right now the standard font is Times, so I have to go through the same procedure time and again (adjusting fonts in Edit Text Style) to change it. Instead I would prefer to adjust fonts once an for all.
It is not an aethetics issue - some serif fonts are irritating in the score.
