Sound Issue
How do I make it sound like there are 2 of the same instruments playing the same notes?
It doesn't sound like 2 different instruments, it's just the sound of the instruments pretty much combine and get louder.
What do I do?

The first thing you said is what I'm doing. I'm using 2 instruments that are playing the same note, but it just makes it sound louder.
In MuseScore, 2 identical instruments playing in unison sound exactly as if there where only one instrument.
If you want it louder, indeed using dymanics (and making them invisible) might be the way to accomplish this.
Or adding some reverb via the synthzesizer or mixer.

If you're looking to have it sound like there are two instruments; you'll have to assign them a different sound in the mixer.
Chances are you'll want a few soundfonts to be able to have a different actual sound for each same-pitched note. See also https://musescore.org/en/handbook-sound-and-playback/soundfonts on how to get some and use them
There are sound fonts that have solo instruments and section instruments, mostly in the strings, but I've seen others.
