how to go back and delete rests in a measure

If I want to add an ornamental in an already created measure, or I want to take eighth notes and turn them into sextuplets, how do I delete the rests that are then created in the measure?

Voice 1 rests can't get deleted (but can be made invisible, select, hit V), voice 2, 3 and 4 rests can be deleted, just select and hit Del.
If you want that the following notes fill the gap, use cut and paste

To add notes to an already created measure, no need to delete anything - just write the new notes directly on top of the rests.

To move some number (only you can possibly know what that number is) of notes move earlier - whethr because of shortening a note or any other reason - use cut and paste as mentioned above.

I think it would be good to know the specific situation more precisely but I do not quite understand: how do you add an "ornamental"? (Your language is likely not English but this is not a word that is commonly used, you mean an "ornament"?) And how do you change an eighth's note into sextuplets? Most importantly how are rests created when you do these things?
It would be best if you could post--as an attachment--some screenshots or score snippets that show what you want to do more in detail and then it may be easier to help you out.

Adding ornaments/accidentals/ grace notes: Click on notehead and double click selected Articulation/Ornament/or Grace note (on Palette).

Eighth to sextuplets: If you mean: Eighths to Sixteenths -> Overwrite it: Click on first eighth note, press 3 (turn to 16th) and start input notes.
If you want to 16th tuplet (on an eighth note), select notehead and press Ctrl+3.
