entering tempo text for 6/8 time
When entering a tempo text for 6/8 time I'd like to enter the time for a dotted quarter note. It seems to only allow me to enter what a quarter note equals. Of course I can make the calculation in my head and enter the time for a quarter note ad 66% of the dotted quarter note time. But is there a better way of doing this? e.g. if a dotted quarter note = 100, I can enter a quarter note = 66.

This is definitely a known area for improvement. There's been some talk of how this might be accomplished, but nothing definitive decided.

Where all the palettes are. Not in the basic palette, just the advanced, I think, but also in the master palette

Do you know if that will be changed in 3.0?
Tempo in BPM in the wizard should be asked after the time signature (3/4, 6/8, ...), not before.
The tempo in the wizard speaks about "BPM" but without the time signature it can't know what a "B" is.
It is not a "must" as a clear bypass is to ignore the tempo question in the wizard and to add tempo afterwards, but that would give a more "finished" or "professional" impression of the product.

In 2.0 you can have tempo texts like "(dotted quarter note) = 80" and MuseScore will calculate the proper PBM (still in quarters) for you.
Not in the new score wizzard though and I'm not aware of any changes to that in 3.0. Fell free to submit a corresponding feature request in the issue tracker, https://musescore.org/en/node/add/project-issue/musescore
