If you select a note(s) and press "x" it will reverse the stem direction. This works for numerous elements.
"X" indeed lets you flip things one at a time (or however many you select at once).
To literally do them all, I'd wait until you are done entering notes, then select all (Ctrl+A), then press "Notes" button in Inspector, then set the "Stem direction" to "Up".
But more context would help. if the idea is because you will eventually be adding a second voice below the first, this will happen automatically as soon as you enter the second voice - no need to mess with stem directions manually. Or, if this is percussion, better to edit the drumset definition. Can you attach your score and explain more about what you are actually trying to accomplish?
