Change Instrument Voice
Have score set for Oboe and Clarinet but would like to replace with flute voice. How do I do it?

Open the Mixer
If you are changing the clarinet you should definitely change the instrument. If you're changing only the oboe, then the mixer would suffice, though the ranges will be different. Right click the staff, choose Staff Properties... then click the Change Instruments button and select the flute.
The main reason to actually change the instrument (via right-click, Staff Properties, Change Instrument) rather than merely changing the playback sound (via the Mixer) is that clarinet is a transposing instrument and flute is not. So even if you change the sound from clarinet to flute, MuseScore won't re-transpose the music for you unless you actually change the instrument, so when human musicians go to play the score, it will be totally wrong.
