If you really mean volume, i.e. CC7 messages, this is adjusted via the volume knob in the mixer. If you actually mean velocity information per note, this can be done via dynamics as indicated above.

Yes, it didn't occur to me to do that with dynamics. I was trying to use the mixer but it doesn't translate to a midi. Thanks.

well the mixer does (at least should) translate to midi, but to one single CC7 message per channel at the beginning of the file. But it anyway looks like velocity is what you need. There are also other things that change velocity besides dymics on single notes / chords, like hairpins if you put dymics at the ends, Sforzato articulation puts an accent on the note, crescendo also translates to velocity information. Try it out.
