Use the mixer (F10). The instrument name is at the bottom of the window and the sound assigned to it is near the top left.
Or, just select the proper instrument to begin with when creating your score. If you are starting fro the default score, change the actual instrument, by right-clicking the staff, Staff Properties, Change Instrument. That way not just the sound is affected but everything else that would need to be (name, transposition, etc).
