Harp pedal diagrams are available in a plugin. See https://musescore.org/en/project/harp-pedal-diagram-0
una corda and tre corde is easy to get using the "expression" text style and changing the text. I don't know how you would get the sound, since there is not an una corda patch in the soundfont afaik. You would need a special soundfont. Or maybe use the "mellow grand piano" preset with soft dynamics?
