To reproduce the issue:
1. Open MuseScore
2. Change language to Polish
3. After changing the language, some texts are still in English, even if the translated string exists in language file. See attached screenshot. This issue is caused probably by existence of double-ampersand (&&) characters in the displayed English text. In the translation file the original English text has only one ampersand (&).

This most probably is a custom workspace/palettea, I do see non-standard enties there.
Custom palettes are not translated.
And this here probably has been created with an older version of MuseScore, which still had those double ampersands, which no longer is the case.
Edit it to looses one of them and it should get translated.
That still won't help for the non-standard Sticks and Mallets
