extra whole rests
Why does it add an extra whole rest to my measures as if adding an extra voice? The rest shows up above my input notes.

Because voice 1 has always to be there and complete. Don't use other voice until needed, see https://musescore.org/en/handbook/3/voices
Have another look at https://musescore.org/en/handbook/voices and always start with voice 1 on each and every staff
Voice 1 always has to be complete in MuseScore, so if you start entering a different voice in an empty measure, you'll still see the voice 1 measure rest (not a whole rest) by default.

I understand now. This is my first time using this program. I had inadvertently hit the voice button not realizing what those numbers meant. Is there any way to get rid of a voice without losing the other one, or do I just have to go back and redo the whole thing?

Tools > Voices, swap into voice 1, then delete the non-voice-1 rests

The menu option is called "Exchange voice 1-x" with x being the voice you've currently used.

When I click on voices, all the options are gray.

This is really frustrating. I've tried everything it told me to do to select a range of measures, and I can't get anything to work.

To select a range of measures, click an empty spot in the first so the blue rectangle appears, then click an empty spot in the last so the blue rectangle encompasses them all. Or if it's the whole score, just do Ctrl+A.
But also note, if you tried doing the steps above out of order and now have Voice 1 deselected in the Selection Filter, you indeed probably won't be able to select much. It's important only deselect it while doing the specific task for which you are using it.

Thank you all for your help. I ended up just starting over. It was much faster than trying to figure out how to undo what I'd done. Hopefully, I'll be able to master this program before the next project.
