When editing the text on the glissando line(both the straight and wavy variants), saving, closing and then reopening the project will revert it back to "gliss.". Having no text seems to actually save it though.

Which version of MuseScore, exactly?
This should be fixed in 3.6.2, see #316096: Glissando Reverts between closing and reopening file
Oh I was on 3.6.0. For some reason MuseScore did not update automatically so I thought I was on the latest version. It is working as intended on 3.6.2
That is a known issue with macOS
