changing something in the middle of the score
I was wondering how I can change something ie a triplet (1 note) to a triplet (2 notes), without redoing the whole score. Also, how do I put a space between the DS al Coda and Coda, or put coda onto another line?

As neihter just one, not just two notes form a triplet, so I can't make sens out of your first question.
For separating the coda use either s system break or a horizontal frame or both.
Certainly you can always edit scores without redoing the whole thing. But in order for us to be able to assist you with the specific edit you have in mind, you'd need to attach your score and describe in more detail what you want to do.
