How do I choose the Jazz style for Chord Symbols for an existing score?

Format / Style / Chord Symbols, select "Jazz". You may also wish to increase the font size, in Format / Style / Text Styles / Chord Symbols. Or use the Inspector to change on then press the set as style button ("S" icon).
