In the Musescore file attached, I am trying to rename "Wd. Bl." to "2." (to indicate performer rather than the instrument). Every time I do this, the third performer is also changed to "2." and the part where it switches to violin breaks both visually and in the playback.

I have recorded myself encountering the bug here: https://youtu.be/nP3ta5DrpJ8

Further relevant information: I'm pretty sure in an older version of the score I had wood block in the percussion 3 part before moving it to percussion 2, where it is today

Workaround No Yes

You're having multiple instrument changes in that staff, Tom-Toms to Wood Blocks (in measure3), back to Tom-Toms (actually Concert Toms) in measure 6)
Changing the short instrument name of that 2nd instrument in a measure after those instrument changes (like in measure 4 or 5 and 7) indeed changes that of the 3rd staff too.

But changing the 3rd staff's short name after the instrument and stafft type change to Violin (?? doesn't look nor sound like that, more like another Wood Blocks) (in measure 3) fixes that, so there's at least a workaround.
