How do you create a "dolce cantando"?
If it is a text, can you tell me how to put it.
If there is a short cut, in the master pallets, tell me where. I have been wondering how to put it in my score.

Select a note or rest to attach the instruction to.
Then from the Add menu select Text and within that select Expression. You will then have to type the desired words and, if necessary, adjust the position by changing the x and/or y offsets in the inspector.
If this is something you will use often you can CTRL+SHIFT drag it to a pallet for future use.
See https://musescore.org/en/handbook/3/text-basics for more detailed information.

Is what compatible with 3.6.2? The handbook that I linked to is compatible with the latest stable version which is version 3.6.2

Every version of MuseScore since the very beginning has supported the commands to add text. Ctrl+Shift+drag to add to palette has been supported for, hmm, maybe the last 5-10 years or so. So, yes, definitely works in 3.6.2, which is the current version.
