Dynamics - Custom Velocities
When customizing the velocity of a dynamic, in my case, the ffff dynamic, is there a way I can change it beyond the limit of 127 velocity? I wanted to change it to 140, but it doesn't exceed 127. Are there any plugins or other methods of increasing the velocity any further?

You could lower the dynamics in the rest of the piece and raise the master volume in the Synthesizer.

I was considering that. If I can't figure out any other ways to go beyond 127 velocity, I'll try that.

127 is the highest value as per the MIDI standard; there is nothing above maximum.
